Who doesn’t love nutella? I mean really, is there anyone out there that doesn’t love this rich hazelnut and chocolate spread? Hazelnuts and chocolate make for a perfect combo and that’s no exception in this drool-worthy cookie from America’s Test Kitchen.

I love baking with hazelnuts, but I have to be honest – I am less fond of going through the process of removing the skins. It’s not that roasting them and cleaning them off with kitchen towels is that hard, it’s that the perfectionist in me comes out and I get frustrated when I can’t remove every bit of skin. That’s why I was so thrilled to get these roasted unsalted hazelnuts from Oh Nuts that have all of the skin completely removed! It saves a whole step and I can completely get behind that, especially in the busy holiday cookie time of year!

Chocolate Turtle Cookies

I hope you’ve saved room for one last cookie recipe, because these were my favorites of the season! When Steph, the social media manager from America’s Test Kitchen, sent me a copy of America’s Test Kitchen Holiday Cookies 2010 Special Issue I had a hard time deciding which cookies to make. I asked Joseph if he could help me narrow down the options and when I opened the cover he saw these chocolate turtle cookies and said, “Those. Make those.” I told him he couldn’t take the easy way out; he had to look at all 64 recipes and tell me which one he wanted. But even after going through the entire special issue, he stuck with his original answer: the chocolate turtle cookies.

And frankly, it’s just further proof that I picked out the perfect guy because he was so right. These cookies are ridiculously good. How can you go wrong with gooey caramel nestled in a delicate chocolate cookie coated in toasted pecans? The answer? You just can’t. Continue reading

spicy garlicky cashew chicken and chilled sesame spinach

There are some recipes that you know you’re going to love just by a quick glance at the ingredients.  This is one of those recipes.  Cashews, with their rich, creamy, salty nuttiness are one of my favorite nuts, I love cilantro and I love, love, love garlic.  And if you ask me, almost any dish can be improved with a kick from jalapeños.  So when Joseph asked if I would be interested in trying the recipe, I ran to get my coat so we could hop in the car to get to the grocery.

Joseph found the recipe in The Essential New York Times Cookbook: Classic Recipes for a New Century, which he got  for Christmas.  And it was, just as I had predicted, an awesome recipe. You start off by blending the cilantro, lime, cashews, garlic, brown sugar and oil and then marinate the chicken in that heavenly mixture.  What’s not to love?
